We were thrilled to come across this excellent and in depth article on don’t waste the crumbs where they explain how you can regrow all your favorite veggies in water. They outline 10 popular vegetables including carrot greens, leaks, lettuce, lemongrass, green onions, garlic chives, fennel, cabbage, and bok choy. They give you the instructions and then also some further advice what else you can regrow. The list below is from their site so lots of great info.

- sweet potatoes
You can also save the seeds/pits from apples, cherries, lemons, nectarines, peaches, peppers (sweet and hot), plums, pumpkins and tomatoes to grow your own new vegetables!
