We love anything that can be whipped up in a Muffin Tin and these Chicken and Cheese Mini Pies will give you kitchen cred!
You will notice that one of the Ingredients in these Chicken and Cheese Mini Pies is Bisquick.
If you are unfamiliar, it’s a Pancake style mix and it’s used in lots of recipes. It essentially binds the ingredients together. You probably already have something similar that you are using. In any event, we have included the details on a recipe card below.
All you need is some all-purpose flour, baking powder, salt, sugar (optional) and vegetable shortening. This easy recipe only requires 15 minutes prep time which is such a bonus in this busy world. As you can see the results are superb and did we mention delicious! You can use leftover or Rotisserie Chicken for this recipe too!

Chicken and Cheese Mini Pies Ingredients
- 1 (1.3 lb) rotisserie chicken, shredded (skin and bones discarded)
- 1 1/2 cups shredded pepperjack cheese
- 1 (3 oz) can Old El Paso™ diced green chiles (optional!)
- 1/4 cup peppercorn ranch dressing
- 1/4 cup cilantro, plus more for garnish
- 1/2 cup Bisquick™ Original baking mix
- 1/2 cup milk
- 2 eggs
- 1 cup salsa of your choice

Chicken and Cheese Mini Pies Directions
Start by preheating your oven to 375 degrees F.
Grab a large bowl and add your shredded chicken (you can use Rotisserie as an alternative for this recipe) cheese, green chiles if that’s your taste, peppercorn ranch and cilantro. Combine it by mixing well together until you have a nice consistency.
For the next step use a smaller bowl and whisk the Bisquick (we have included a recipe card above with the homemade Bisquick mix recipe), milk and your eggs.
Using Cooking Spray, lightly coat a 12 cup muffin tin.
Pour some of tegg mixture into each cup, about a tablespoon.
Now, add your chicken mixture, about 2 tablespoons on the top. Finish with another layer of your baking mix. Repeat the process with the remaining cups, using all the mixture.
Bake for a total of 30 minutes. To check when ready, insert a toothpick. When it comes out clean, they are ready!
You can serve with a garnish of cilantro and salsa. These Chicken and Cheese Mini Pies are also known as Tex Mex Pies.
