Marshmallow Fluff Recipe
- 1 cup cold water, divided
- 1 tsp gelatin
- 2 1/2 cup granulated sugar
- ¼ tsp salt
- 2 tsp vanilla extract
Place 1/4 cup of the water in a small mixing bowl, and sprinkle the gelatin on top. Mix them together and set it aside for ten minutes, to firm (or swell) up.
In a saucepan, place the remaining water, sugar, and salt. Give that a mix and bring it up to medium-high heat and cook, occasionally swirling the pot gently, until the syrup registers 240 degrees F on a candy thermometer or about 7 minutes, if you don’t have a thermometer.
Once the gelatin has sat for ten minutes, add it to the bowl of a stand mixer (or a bowl with your hand mixer). Then, carefully pour the hot syrup over the gelatin mixture, and whip on medium-low speed for 2 minutes. Increase the speed to high, and continue to whip until the sauce becomes thick, shiny, and white, about ten minutes. Stir in the vanilla extract about half way through the whisking process. Add to a large mason jar and refrigerate.
Note: This fluff becomes crystally when cold, because there is no corn syrup in it, so just add it to the microwave for 10-15 seconds and then let cool, and it will return to its fluffy texture.
How To Make Marshmallow Fluff From Marshmallows -:
Did you know that you can also make Marshmallow Fluff using store bought or homemade marshmallows. We were very excited to discover this. All you need are 2 Ingredients, Marshmallows & 1 Teaspoon Corn Syrup. If you use mini marshmallows the ration is about one cup to 8-10 of the larger version.
The trick is to melt them over a double boiler using low heat. It is also suggested that you have lightly greased hands when you are handling to mixture. This is very sticky. Initially, it will be lumpy as it is melting but it will start to take on a liquid type consistency. That is the time to start stirring in your corn syrup. We read the comments and there were a few that it did not work for. Those that nailed the recipe were very complimentary. One of the readers, Colleen said that she made hers in the microwave. Here’s her comments ..
“We ended up doing it in the microwave. We put 6 marshmallows in a bowl and then added a tint of sugar, and a eigth cup of milk. Then we put them in the microwave for 30 seconds and when we opened it, they were huge which meant they were done. Then we mixed them together, and it ended up making fluff!”
