We are all about childhood favorites, especially when it comes to good old fashioned recipes and this Weetbix Slice ticks the box ..
Our regular WHOot Contributor, Wendy from Wendy’s Kitchen Table is back with another of her legendary recipes to share with us. As a Kiwi Gal, Weetbix Slice is a recipe plucked straight from her childhood and it more than likely is yours too.
The version Wendy is sharing with us today has a bit of a twist. It has a fancy icing and even features a chocolate freckle on top!
Weetbix Slice INGREDIENTS
Here’s the list of ingredients that you will need for this recipe.
- 180g butter, melted
- 1 teaspoon vanilla essence
- 1 cup shredded coconut
- 3 weetbix, crushed
- 1 cup flour
- 1 tsp baking powder
- ¾ cup sugar
- ¼ cup cocoa

- 200g good quality baking chocolate, milk or dark
- 16 Freckles

Weetbix Slice Instructions
Preheat oven to 180˚C or 160˚C fan forced. Grease and line a 20cm x20cm square cake pan.
Combine dry ingredients in a large bowl. Pour in melted butter and vanilla essence. Mix well. Press mixture into pan and bake for 20 minutes. Allow to cool and then ice.

Weetbix Slice Icing
Break chocolate into pieces and put in a microwave proof glass bowl. Heat on power level 4 for 1-minute bursts until melted. Mine took 3 minutes. Pour over base and place Freckles on top.
Note: Instead of Freckles use sprinkles or coconut. You can use icing sugar and cocoa powder for icing instead of melted chocolate.
